Is it the upgrade needed for me

I'm considering the 920+ to simply upgrade my video library to 4k to watch via Plex and then use the NAS for general file storage. Can I get away with one slot 8GB? Or do you think I need to go through the unofficial upgrade?

You can use ds920+ for local 4k streaming via PLEX. But remote streaming is only possible up to 1080p using Plex. If you need remote 4k transcoding built-in DS Video app can do that.
RAM size will not change anything.
If you do need on-the-fly 4k transcoding via PLEX remotely, consider models like Qnap 74 series NAS https://www.qnap.com/en-us/product/tvs-h...s/hardware
